It began with a small pilot brewery tucked away in a basement. As a student of science, it seemed like the best way to recreate classic beer styles was to start by understanding the water. After some (ironically) dry reading and plenty of experimentation, a simple but valuable beer-making lesson was learned…

It’s not that top notch equipment isn’t important - and our state of the art facility certainly incorporates the best in German engineering - but no amount of equipment can make up for the wrong water. So with that as a backdrop, our water know-how was leveraged in the creation of a wide variety of local and European beer styles on a much larger scale, confirming our earlier hypothesis…

Turns out, operating a brewery requires a ton of hard work. Cleaning, prepping, brewing, fermenting, analyzing, packaging and even more cleaning. Spending so much time at the brewery led to the realization that drinking plain old water just wasn’t cutting it as a source of daily hydration. Our taste buds demanded better; leading us to accept a virtually indisputable axiom…

In an attempt to inject some life into our daily hydration regimen, we researched other types and styles of water, which led to an amazing discovery: seltzer! Not that run-of-the-mill carbonated water you find on every store-shelf, but something on a whole new level. Our research led us to the very origin of seltzer itself in the municipality of Selters Germany. A naturally carbonated medicinal mineral water spring located in the urban district of Niederselters has been known since the Bronze Age and gave rise to the term seltzer. Seriously, you can’t make this stuff up (technically its just chemistry, so you can actually make this stuff up), but the fact that the whole seltzer craze actually started in our adopted back yard was just too good to pass up. Talk about a soft toss: Germany - it’s what we do! So in an unavoidable fit of ultimate chemistry, we set out to copy that storied water. A short time after putting this remarkable water on tap for all to enjoy, we began to run out. Folks were literally drinking barrels of it and we found ourselves constantly making more just to keep up with internal demand. Then a thought occurred to us: why don’t we try flavoring our seltzer? We started with all natural lime, tangerine and grapefruit. In combination with our off-the-charts plain seltzer, the flavored versions were simply irresistible. Healthy and delicious. There was no stopping the new seltzer world-order at this point, so we decided to try our hand at hard seltzer. After taste-testing a large swath of the competition, both local and national, we developed our own list of “things not to be copied” including “green flavor,” “too carbonated,” and the ever present “weird aftertaste.” Instead, we built an all-natural hard seltzer right on top of our Mother Nature-approved gently carbonated medicinal mineral water.
